April Catch Up: Part 1

For the past couple of weeks I've been a busy little bee.  I think it has something to do with my new job, after staring at a computer screen all day my eyes and brain are exhausted and want to do nothing but relax.  That being said, my weekends have been pretty full with friends & fun times, amazing food & fabulous memories! 
Rather than going day by day, or sharing every special moment, I've decided to combine the past couple of weeks by doing a two part 'catch-up' post of what I've been up to!

When my darling twin Caitlyn came up for a visit we had every intention of making a delicious dinner at home...but then our mutual love for sushi took over and we ordered in tons of sushi, salad, soups, and appys!


While we were waiting for the sushi to be hand rolled and delivered to us by a cute little man I concocted a delicious Blood Orange Cosmo!




Ingredients
Freshly Squeezed Blood Orange
Grey Goose Le Citron
Homemade Simple Syrup
Splash of Lemon Seltzer

Later that week I met up with the one and only Joey! 



It seemed as though we hadn't seen each other in forever so he and I made plans to meet for lunch at Bombers. The place was packed due to 'Free Burrito Day'. The owner handed out a great deal of free burritos to all, with hopes of earning generous donations for a charity.


People were walking all over Lark Street with their delicious & overflowing burritos!


After watching people devour their burritos on the street my tummy decided to wake up and demanded I feed it, fast! 
Joey and I both started with The Jimbo: Half Beer - Half Margarita.

It was so delicious and refreshing that we quickly decided we were going to need another one (or two).

For food, we started with the Piggy Fries,


Crispy fries loaded with BBQ pulled pork, melted jack & cheddar cheese, chopped jalapenos & BBQ sauce. They were SO good (my mouth is watering just thinking about them)! After ordering such a heavy appetizer I decided I would try and be good by ordering their veggie burrito.





Joey ordered the Island Quesadilla.


A grilled flour tortilla folded over cheese, onions, jalapenos, crumbled blue cheese & pineapple chunks. Filled with smoked chicken and covered in our ranchero wing sauce. Served with
a side of ranch dressing. Need I say more?

With full bellies and carefree attitudes (thanks to the Jimbos) we paraded around town for just a little while longer until it was time to part ways for the rest of the evening.
