WHIPPED GOAT CHEESE

I've discovered my new favorite treat!



The idea came to me while I was enjoying some delicious wine at The Confectionery with some of my girlfriends after checking out The Grocery for the first time. 
The girls and I started to get hungry so we ordered the Crostinis with Ricotta and Apricot. But we were told it changed to goat cheese, which in my opinion is even better!
They were absolutely fabulous and I knew I had to recreate them.
So I woke up early the next day, ran to the grocery store, and whipped up a recipe of my own.
It's simple. Delicious. And I cannot get enough of it.
Here's what you need:

1 cup whipping cream
8 oz goat cheese 
4 tablespoons of milk
1 baguette
1/4 cup apricot preserves 

Start by pouring the cream into a bowl 


Grab your electric mixer or a whisk - and whisk the cream until it becomes fluffy enough to reach the texture of whipped cream.

In another bowl mix the goat cheese and milk together.




Slowly fold the whipped cream into the goat cheese, until it is well incorporated.


Like this..


When you're happy with the consistency, get excited...



Because you're about to devour a delicious snack!


Spread the goat cheese on top of the baguette (or crostinis), add some jam (I chose apricot & homemade strawberry), and enjoy!








It's so simple and delicious! You can add different ingredients, like chives, if you're in the mood for something a little less sweet.
