If you follow me on Instagram then you'll know I gave homemade sushi making a go recently. I invited Alexa over to experiment with me and I am happy to say it was a great success!
I wanted to keep my fist attempt simple, so I decided to make Philadelphia rolls and California rolls.
Having never made sushi on my own I wasn't sure how to make the rice, but Alton Brown's recipe helped me out! *Note: Some of the rice will stick to the bottom of the pot when you're all done cooking it, just ignore it. I tried including it and there was some hard pieces of rice that ended up in the rolls.

Turns out spreading the rice wasn't as easy as I thought....
The Philadelphia roll came out much better! I added a third of the rice I used for the first roll and the second attempt came out perfect.
Buy yourself one of these bamboo mats and make sure when you roll up the sushi you pull the bottom of the mat, making sure it's tightly compact.
There's something I must admit, I have an intimate love affair with spicy mayo! I slather it over every piece of sushi I eat. If you want to make some for yourself, I followed this recipe.
