REFRESHING TOMATO & AVOCADO CHEESE SALAD

The sun is shining, birds are chirping overhead, and all of the icicles and snow mounds are melting, which means spring is almost here! Doing my very best to get into the springtime spirit I decided to whip up a salad that reminds me of the warmer months.
 I've had this salad for the past two days, it's the perfect lunch for one or a snack for two.
The fact that it's ridiculously simple to makes it even better!

All you need to make this salad for yourself is:
 

- 1 Avocado
- 1 Tomato
- Juice form a 1/4 lemon
- Mozzarella Cheese
- 4 large basil leaves
- Splash of olive oil
- Salt & pepper to taste 
- Balsamic glaze ( I used Trader Joe's )
- A couple slices of bread to dip in the leftover sauce



Cut the avocado, tomato, and cheese into 1/2 inch pieces. Julienne the basil and combine everything in a bowl. Add the lemon juice, drizzle a bit of olive oil, add the salt & pepper and mix until everything is well incorporated. 




Once you've seasoned the salad to your liking plate it and drizzle some of the balsamic glaze over top.


Now eat up!
