I decided to take a quick trip home at the beginning of the week to spend a few days with my twin sister and to just get away from it all.
If I'm being honest, I've been feeling completely lost lately, hence the lack in blog posts. But after 48 hours of twin time, constant laughs, and the occasional 'freaky twin thing' where we end up saying the same thing at the exact same time and then break out into roaring laughter, I think I'm feeling a little bit better. I'm lucky to be one of those people who were blessed with a twin. Caitlyn has been and always will be my other half, my soul mate, and my best friend.
As similar as Caitlyn and I are we differ when it comes to breakfast. She loves anything sweet and sugary, whereas I love everything involving eggs, cheese, and bacon.
Seeing as how we made these incredible pastries the previous afternoon (blog post coming soon) I persuaded her to forget her sweet tooth for one morning and try a breakfast burrito. She was so happy with the outcome that we made them the next morning for breakfast, too!
To whip up some of these banging burritos with a secret sauce for two you'll need:
- 2 flour or corn tortilla wraps
- 4 eggs
- 4 pieces of bacon or other breakfast meat
- cheese: either pepper jack or sharp cheddar
- 2 small russet potatoes; diced or 1 can diced potatoes (the can has a quicker cooking time)
- 1/2 yellow onion; diced
- onion powder
- salt & pepper to taste
- 1/2 cup mayo
- chile powder
- lemon or lime juice
- salt & pepper to taste
(The measurements of spices for this sauce is completely up to you, just taste as you go and see what you like. But, be sure to add a good amount of paprika and chile powder, because it's supposed to have a nice kick.)
Start by cooking your bacon.
Once cooked, remove the bacon and place on a paper towel to remove excess grease.
Pour out a majority of the remaining bacon grease, but leave enough so the bottom of the pan is coated, then toss in your onions and cook until they're translucent. Then add in your diced potatoes.
If you use canned potatoes they shouldn't take long to cook (10 minutes at most), however raw russet potatoes will take some time. So keep them on a low - medium heat, add a splash or two of water, and cover so the potatoes begin to steam a bit.
After about 10 - 15 minutes the potatoes should begin to soften; this is the time to add your seasoning. Sprinkle a light layer of paprika, onion powder, salt, and pepper over the potatoes, then mix and let them cook for another 5 minutes.
While the potatoes are cooking scramble up your eggs following the recipe for my creamy scrambled eggs.
Grate your cheese.
Now, it's time....to start preparing the burrito.
Add the eggs first, placing them off center just a bit so you'll be able to build this burrito up and roll it with ease. Make sure you leave a half inch of space on the ends so nothing falls out. Then add a hefty sprinkle of cheese, the potatoes, bacon, and special sauce.
Once the burritos are formed place them in a lightly greased pan to crisp up the shell, don't skip this part, it makes all the difference.
Then plate the breakfast burrito, cut in half, and enjoy!
Fix yourself some iced coffee and you're ready to start your day!
