I'm a big fan of zucchini, it's one of the most versatile veggies out
there. You can add it to a salad, turn it into pasta, or whip up a low
carb pizza with it! This time I decided to turn my zucchinis into an appetizer and
create cheesy zucchini fritters.
To whip up a batch of these for yourself you'll need:
- 2 zuchinnis (grated)
- 2/3 cup parmesan cheese
- 2/3 cup bread crumbs
- 1 teaspoon paparika
- salt and pepper to taste
- 1 tablespoon olive oil
First, you'll need to grate the the zucchinis, then sprinkle with salt, and let it sit in a colander for 10 - 15 minutes to draw out as much excess water as possible. Then place the grated zucchini in a towel and ring out any extra water.
Warm up a pan on medium heat and add the tablespoon of olive oil. Cook until the zucchini fritters are golden brown, about 5 - 7 minutes on each side.
While the fritters are cooking whip up your dill aioli. You'll need:
- 2/3 cup oil (grapeseed, canola, etc)
- 1 egg yolk
- 1 tablespoon dijon mustard
- red wine vinegar
- salt & white pepper
- fresh dill
Start by adding your egg yolk and mustard to a bowl. Mix them up and add a splash of vinegar. Then, slowly pour the oil in and continue to mix. Once you've added all the oil season with salt and pepper and add an extra splash of vinegar. When you've reached a consistency and flavor you're happy with, chop up the dill, and mix it into the aioli.
Dip the crispy fritters in the aioli and enjoy!
