PEACH PASTRY

I don't eat pastries or other baked goods that often, but after creating a mixed berry pastry recipe with my sister last week I knew I had to test out a peach recipe for myself, and I am happy to report they came out wonderful! 


These are pretty simple to make with ingredients you'll most likely already have. To make 4 pastries you'll need:

- 1 package of croissants
- 1 package of cream cheese at room temp (you'll only need 3/4 of the package)
- 2 ripe peaches
- 2 tablespoons of confectioners sugar
- 1 teaspoon pure vanilla extract
- egg whites from 1 egg, plus 1/2 teaspoon of water to create an egg wash
- 2 tablespoons sugar (to sprinkle on top)
- rolling pin

I don't really care for baking, so I cheated and picked up some buttery croissants for the base.



First, preheat the oven according to the directions on the croissant tube and slice up the peaches.


Then mix the cream cheese, sugar, and vanilla extract.  


Combine ingredients until the cream cheese mixture looks like frosting.


Each pastry will use two croissants; place the triangles to create a rectangle and use your rolling pin to stretch them out. Then spread the cream cheese mixture on half of the pastry dough, leaving the edges free from the filling, and top with the peach slices.



Carefully fold the empty side of the croissant over to cover the filling and secure the edges by pushing them down with a fork.


Brush with the egg white mixture and sprinkle on the sugar.



Then bake in the oven for 15 minutes or until golden brown.


Be patient and allow the pastries to cool for at least 5 minutes, or else you'll burn your mouth, like I did.


But, if you can't wait that long, just cut them up and they'll cool a bit faster!
