Okay, so I've been a little behind in my blogging lately, but I promise, I'll be better! Remember how I said I'd tell you how the brunch with my two lovely friends went? Well here it is!
I woke up extremely hungry and my tummy was craving some delicious homemade breakfast food. So Katie and I went to the store early in the morning to make sure we were fully stocked with the essentials: bacon, eggs, toast, berries, champagne & orange juice for mimosas, pretty flowers for the table, and of course, more bacon.

While Katie and I waited for Joey to arrive we decided to nibble on some fruit . . .
and bacon . . .
Once Joey arrived, we got down to business. Breakfast-making business, that is.
Cheesey herb scrambled eggs . . .
Fluffy yet slightly crispy french toast (compliments of Mr. Joey) . . .
To go with the french toast, I made a sweet berry spread to smother all over the french toast.
Its very easy to make!
Take a handful of frozen berries, add a spoonful of sugar, and a squeeze of lemon (1 lemon wedge is enough). Microwave the berries in three 40 second intervals; stopping to mix the berries in between. Then you're ready to add a big spoonful (or two) onto your french toast!
We toasted with mimosas and sat down to enjoy the fruits of our labor.
It was all delicious!
