If you fancy a crispy grilled pizza for yourself you'll need:
- 1 1oz pizza dough (separate in half to create two extra thin personal pizzas)
- olive oil
- corn meal
- 1 - 2 garlic cloves
- tomato (either fresh or canned whole tomatoes)
- mozzarella
-2 pieces prosciutto
- 1 handful of fresh basil
Separate your dough into two bowls, drizzle with olive oil, and cover with a wet towel. Let the dough rise for 45 minutes to an hour, turn the grill on 15 minutes before the dough is fully risen and prep your toppings. Once it's ready begin to work the dough. It doesn't matter if you get it into a perfect circle, I actually think it's easier to manage on the grill if it's not, so I made a 'rectangle' shape.
Before placing it on the grill brush the dough with olive oil so it doesn't stick.
Keep the grill on low to medium heat and let the dough cook for about 5-10 minutes or until it crisps up...

Once you flip the dough brush the other side with olive oil.
As soon as you've flipped the pizza start adding all the toppings.
Close the grill until the cheese melts.
Isn't this just a gorgeous creation?
Slice up the pizza and sprinkle on a bit of red pepper flakes and enjoy!
Don't forget to pour yourself a nice cold glass of white wine, too!

DeleteIf you want the smoky taste of bacon just use speck instead of prosciutto. If it were me, I'd put the cured meat on the cooked pizza instead of submitting that sublime silky meat and fat to the heat of the grill.
